• 1 lb of wild trout, cut into 2 pieces (for ease of flipping in pan)
  • 3 T ghee or unsalted butter, melted
  • 1 T paprika, 2 tsp dry mustard, 1/2 tsp cayenne, 1 tsp cumin, 1 tsp dried thyme, salt and pepper to taste

Here’s How:

  1. Mix seasonings together and set aside.
  2. Melt butter in heavy large skillet and coat both sides of fish in butter and place on plate skin side up.
  3. Generously sprinkle seasoning on both sides of fish.
  4. Heat pan on medium high and place fish skin side up and sauce for 7 minutes, then flip and saute for another 5-7 minutes insuring both sides are browned nicely.
