Easiest Tasty Good 4 U Chicken Soup

This is a warming, satisfying and nutritious dish! Serves 3-4 people.

Ingredients:

  • 4 cups water
  • 1 T ghee or avocado oil
  • 1/4 onion, chopped
  • 3 garlic cloves, chopped
  • 4 tsp chicken bouillon (you can use powder, little cubes, or liquid concentrate) *
  • 2 carrots, sliced in bite sized pieces
  • 2 celery stalks, sliced in bite sized pieces
  • 2 chicken breasts or any kind of chicken pieces
  • 2-3 cups of mixture of greens of your choice: Kale, collard, spinach, swiss chard, parsley, etc.
  • salt and pepper to taste

Here’s How:

  1. Heat a heavy soup pot until very hot.
  2. Add the fat and saute the onions until starting to brown.
  3. Add the garlic, then carrots and celery and saute until seared.
  4. Add water, chicken bouillon and raw chicken and cook for 20 minutes.
  5. Remove the chicken and cut into bite sized pieces and return to the soup pot.
  6. Add the greens, and season with salt and pepper

Serve with a big green salad and perhaps a bowl of quinoa or home made corn chips.

*I like Trader Joe’s Better Than Bouillon, organic low sodium chicken base or some prefer the Better than Bouillon vegetable broth.
