Chocolate Walnut Chewy Cookie

These cookies are flourless and super easy to make.

  • 1 1/4 cups  walnuts
  • 1 1/4 cups confectioners sugar
  • 1/8 tsp sea salt
  • 1/4 cup plus 2 T quality cocoa powder
  • 2 egg whites
  • 1/2 T vanilla extract

1.  Bake walnuts on a cookie sheet for 7-9 minutes at 350. Cool. Chop fine.

2. Mix sugar, salt, and cocoa in a bowl.

3.  Add chopped walnuts when cool.

4. Mix vanilla extract and egg whites together.

5. Pour liquid over dry ingredients and mix until blended, but be careful not to over mix.

6.  Spoon mixture by teaspoonfuls onto baking sheet covered with parchment (bakery) paper.

7. Bake 12-15 minutes or until slightly glossy.

8. Cool on rack. Store in airtight container.

Yield: 1 dozen 3 1/2 ” cookies
