Delicious Raw Fruit Pie

  • 1 1/2 cups coconut
  • 1 1/2 cups cashews or almonds
  • 1/2 cup pitted dates
  • 1 1/2 cups apple butter
  • 2 peaches, sliced thin
  • 1 cup blueberries
  • a drizzle of honey

1. Combine coconut and nuts in food processor and pulse till crushed.

2. Add pitted dates and pulse till blended.

3. Press mixture into pie pan to form raw crust. Chill 30 minutes.

4. Spread apple butter on top of crust, about 1″ thick.

5. Arrange slice peaches and blueberries any way you prefer.

6. Chill pie before serving.


  • Slice peaches thinly and fan from center of pie to edge. Place blueberries in between each section and all around periphery.
  • Puree ¬†fresh mangoes¬†instead of apple butter for 2nd layer.
  • Top with fresh raspberries and/or blackberries.
