Deviled Eggs

This is a great dish to take to a potluck, picnic or block party.


  • 6 eggs
  • 1/4 cup light mayonnaise
  • 2 tsp dijon mustard
  • 1 1/2 tsp white vinegar (I like white balsamic)
  • 1/4 tsp sea salt
  • fresh ground pepper to taste
  • paprika for garnish

Here’s How:

  1. Place 6 eggs in boiling water and cook vigorously for 8-10 minutes, uncovered.
  2. Immediately discard hot water and let very cold water run onto the eggs until they cool.
  3. Allow to settle to room temperature or chill,  and then the eggs will peal easily.
  4. Cut eggs in half, scoop out yoke and place whites on a platter you will be using, and the yolks in a bowl.
  5. Mash yolks with a fork until as many lumps as possible are gone.
  6. Add remaining ingredients except the paprika.
  7. Fill egg whites with yolk mixture evenly and sprinkle with paprika.
