Most of us think of parsley as a throw away garnish, but that would be such a waste. Parsley is loaded with Vitamin C and iron. It also contains Vitamins K, A and folate. Plus, it offers such a burst of fresh flavor.  

Parsley can be found in the more traditional curly leaf or “Italian” style flat leaf. They are both delicious and nutritious! Try it with soups, veggies, or most any kind of protein. Or, for a real treat, make a fast batch of Dianne’s creamy, silky dip… 


  • 1 C Italian parsley
  • 1/4 C fresh cilantro
  • 1/2 C olive oil
  • 2 cloves garlic
  • 3/4 tsp red pepper
  • 1/2 tsp cumin
  • 1/2 tsp sea salt

Blend until smooth and serve with cut up veggies – cucumbers, peppers, and celery are good.
