Fire Roasted Tomato Dip

Ingredients:

  • 2/3 can chopped fire roasted tomatoes (14.5oz)
  • 1/2 can chopped green chilis (4oz)
  • 2 1/2 T tomato paste
  • 1 1/2 tsp tom yum paste
  • 2 tsp fish sauce
  • 2 garlic cloves
  • 1/4 preserved lemon, rinsed, deseeded
  • 1/2 cup chopped red pepper
  • 1/3 cup chopped red onion or shallot
  • salt and pepper to taste

Put it all in a food processor, and pulse till desired consistency.
