Hearts of Palm salad

Ingredients:

  • 1 package of hearts of palm (Trader Joe’s), sliced in slivers
  • 1 avocado, cut into cubes
  • 1 bag of arugula (Trader Joe’s)
  • 3 stalks of celery, thinly sliced
  • juice of 1 large lemon or 2 small
  • 2-3 garlic cloves, pressed
  • 1/3-1/2 cup extra virgin olive oil
  • 1/2 tsp sea salt
  1. Cut up as instructed the hearts of palm, avocado and celery and place in a bowl.
  2. Press garlic into a jar and add lemon juice, salt and slowly whisk in olive oil.
  3. Pour dressing over veggies and chill.
  4. Enjoy with protein of your choosing.
