Mirenna’s Guacamole

  • 3 large avocados
  • 1/4 cup finely chopped red onion
  • 2-3 garlic cloves
  • 1/2 cup lime or lemon juice
  • 1/2 tsp sea salt and fresh ground pepper to taste

Here’s How:

  1. Slice avocados in half, scoop out inside and mash in a bowl, but leave it as chunky as you like it.
  2. Stir in red onion.
  3. Press the garlic into the avocado.
  4. Add the fresh squeezed citrus, salt and pepper.
  5. Mix, chill and serve with cut up veggies, krispy kale chips (http://healingthehunger.com/krispy-kale-chips/) ¬†or Dianne’s rosemary almond crackers (http://healingthehunger.com/wp-admin/post.php?post=1330&action=edit).

Feel free to add more or less citrus and salt depending upon your preference. This guacamole is versatile and if you like, you can add chopped tomatoes, and/or salsa or a touch of red pepper or hot sauce of your choosing.
