Here’s a ┬árecipe when you have roasted a chicken and you want to do something easy and tasty with the leftovers.

    • 2 large chicken breasts, cooked (poached or baked)
    • 4 stalks celery
    • 1 carrot
    • 1 cup sugar snap peas
    • 1/3 cup red onion
    • 1/3 cup dried plums, apricots, or cranberries
    • 1 T taco seasoning (Trader Joes’ makes a nice one)
    • 2 tsp cumin
    • 1 tsp liquid smoke
    • 3 T mayonnaise
    • 1 T dijon mustard
    • 1 T Balsamic, raspberry or blueberry vinegar
    • 1 T fish sauce
    • 1/2 cup chopped parsley
    • 1/2 cup chopped roasted almonds, pecans or walnuts

Here’s How:

  1. Chop all ingredients to desired size.
  2. Mix everything together, except nuts and parsley.
  3. Chill.
  4. Just before serving, chop nuts and parsley and add to the mix.
  5. This chicken salad is great wrapped in romaine leaves as a lettuce wrap.
