Nina’s Halvah or as Coe says Havalah

  • 1cup sesame butter (tahini)
  • 1 cup organic sugar (or monk fruit)
  • 1/4 cup cold water
  • 1 tsp vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/2 of dark chocolate (72 or higher) bar ( 3.5 oz total bar) melted

Here’s How:

You will need 1 candy thermometer and 3 small heavy saucepans ( one should be a double boiler)

  1. Line a small pyrex dish with parchment paper or plastic wrap hanging over the edge, approximately 7/11″
  2. Place chocolate in double boiler and melt.
  3. Place sugar and water in a heavy saucepan, and heat to 248 Fahrenheit. vStir only till beginning to boil.
  4. While sugar mixture is heating, place tahini in another sauce pan and warm.
  5. Mix together tahini, vanilla and sugar mixture and blend quickly with electric mixer and blend till just beginning to look a bit grainy.
  6. Add chocolate in one one side and barely mix to create marble affect.
  7. Press mixture into pyrex dish and even out with palm of hand or spatula.
  8. Cover, Coll to room temperature and chill in fridge.
  9. Cut into small squares to eat.
