Smashed Purple Potatoes

These simple potatoes are satisfying, warming and simply delicious, and the least starchy of all potatoes!

Ingredients:

  • 15-20 small purple potatoes (can use red)

  • 1 T ghee

  • 1 T olive oil

  • 1 T sea salt (for boiling)

  • 3/4 tsp sea salt for seasoning

  • fresh ground black pepper to taste

  • finely chopped parsley (garnish)

    Here’s How:

    1. Bring a pot of water to boil and add 1 T sea salt. Cook potatoes until soft (20- 25 minutes)

    2. Preheat oven to 400 and after potatoes are drained and cool, place them on a cookie sheet and dry them in the oven for about 5 minutes.

    3. Remove from oven, and use a large fork to squish them, keeping them in one piece. (thinner=crisper)

    4. Drizzle slightly with ghee, then olive oil. Sprinkle with salt and pepper.

    5. Bake for about 45 minutes until crispy. Do not turn.
