Yuko’s Shrimp Stuffed Shitakes

This recipe is so easy and a great source of protein and nutrition. My friend Yuko brought it to a potluck and it was delicious. Wild shrimp are high in protein, low in calories, rich in selenium, choline and B12. Shrimp help reduce inflammation and oxidative stress.

Shitake mushrooms are a great source of fiber and B vitamins and minerals. They are also low in calories, and offer health promoting benefits; anti-cancer, reducing cholesterol and enhancing heart health.

Ingredients:

  • 10 frozen wild shrimp

  • 12 shiitake mushrooms, the size of 1/2 dollar or so

  • 2-3 garlic cloves

  • 1-2 green onion or 2 T chopped shallot

  • 1/8 cup chopped parsley or cilantro

  • 1/4 tsp umami seasoning blend (Trader Joe’s)

  • 1 tsp toasted sesame oil (optional)

  • Salt and Pepper to taste, lemon wedge if desired

  • 2 tsp soy sauce, 2 tsp mirin (Japanese Rice wine) (optional)

Here’s How:

  1. Use a food processor, chop garlic, onion, greens, then add slightly defrosted shrimp and pulse.

  2. Season with remaining ingredients.

  3. Stuff mixture into mushrooms.

  4. Saute in a hot, greased skillet for approximately 7-10 minutes covered. Or bake in 350 oven for 7 minutes. Drizzle soy/mirin mixture for another minute, if using.

  5. Enjoy!
