Red Lentils with Capers and Sun-dried Tomatoes

Ingredients:

  • 1/2 medium onion chopped
  • 1 T ghee or avocado oil
  • 2-3 garlic cloves, chopped
  • 2 cups red lentils
  • 1 1/2 cups chicken, veggie broth or water
  • 1/2 cup white wine
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup capers
  • salt and pepper to taste

Here’s How:

  1. Heat skillet, add fat, and saute onion until slightly browned.
  2. Add garlic and saute.
  3. Add broth, lentils and rest of ingredients and cook for 20 minutes or until done.
