Sammie’s High Protein Low Carb Waffles

This is my grand-nephew’s most nutritious daily meal. He is not an enthusiastic eater but loves his waffle!


  • 2 organic eggs
  • 1 T avocado oil
  • a pinch of salt
  • 1 T organic sugar (optional, I never add it, but kids appreciate it)
  • 2 T oat bran
  • 1 tsp brown rice flour

Here’s How: 

  1. Heat waffle iron.
  2. Mix eggs thoroughly and slowly add in oil.
  3. Gently mix in remaining ingredients.
  4. Pour into waffle iron in 2 batches. (slowly fill the iron and close for 5-10 seconds, then open and add the remaining mix being careful not to overflow)
  5. Cook until light changes, turn and cook till how you like it. (soft or a bit firmer)

Enjoy this waffle with some almond butter and maple syrup or jam.
