Ingredients:

  • 6 cups spinach
  • 3 cups arugula
  • 1/2 cup walnuts
  • 2 garlic cloves
  • 2 tsp grated lemon rind
  • 2 T fresh lemon juice
  • 1/4 cup grated parmesan
  • 2-3 T nutritional yeast
  • 1/2 tsp sea salt
  • fresh ground pepper
  • 3 T extra virgin olive oil

Here’s How:

  1. Place walnuts, garlic and cheese in the food processor and blend.
  2. Add several handfuls of greens at a time to blend.
  3. Add remaining ingredients except olive oil which can be added slowly while processor is running.
  4. Taste and adjust seasonings.
