Years ago, I attempted to make bone broth but couldn’t handle the odor in the kitchen nor the taste when it was done. I never considered making a tasteful soup stock but rather pure bone broth. The ingredients below can be altered based on what you have in your kitchen. The apple cider vinegar is an important ingredient to break down the bones. Garlic and ginger have medicinal benefits and of course you can’t go wrong with vegetables, especially greens. The acidity of the tomato rounds out the flavor. The kombu is loaded with minerals and adds a rich, salty taste.

Ingredients for one instant pot:

    • 1 1/2 lb grass fed beef bones, marrow, knuckles, etc (a variety with a bit of meat left on is the goal)
    • 4 carrots, cleaned and whole
    • 4 celery
    • 2 small onion, skinned
    • 1 head of garlic, skin on
    • 1  3/3″  square of kombu (sea vegetable)
    • 2 bay leaves
    • 1 T peppercorns
    • 2 T apple cider vinegar
    • 1 chunk 2/2″ of fresh ginger (optional)
    • 2 T tomato paste or 1/2 cup fresh tomato
    • 3 cups dark leafy greens, kale, collard, etc
    • 1 tsp sea salt
  1. Use an instant pot and place all ingredients in the pot and fill with filtered water to the top line of the container. Do not go over this line.
  2. Close lid and be sure to leave the pressure release valve in the closed position.
  3. Press soup setting, then be sure pressure is on high and press the plus button to 120 minutes.
  4. I prefer to allow the cooker to cool down naturally until the float valve drops down. Once all the pressure has been released, you can open the lid or the cooker will go into the keep warm cycle.
  5. Let the broth cool and use a strainer to pour broth into jars being certain to leave at least 1″ from the top so if you freeze the broth, the jar will not explode.
  6. Scoop the marrow from the bones and save for your pets.
  7. You can even puree the veggies and add to pet food.
  8. Start your day with a cup of broth (very high protein: 16oz=20grams) and if you are doing intermittent fasting, ingesting the broth will make the morning fast time so much easier.
