Paleo Brownies

These brownies are fudgy, moist, not too sweet and very satisfying. They are flourless, made with coconut sugar and some monk fruit (to reduce the sugar grams) and can be made with coconut oil instead of ghee or butter if preferred.

Ingredients:

  • 10 oz dark chocolate

  • 4 T coconut oil or ghee

  • 1/2 cup coconut sugar

  • 1/4 cup monk fruit sweetener

  • 3 eggs (room temperature)

  • 1/4 cup cacao powder

  • 2 tsp vanilla extract

  • 1/4 tsp sea salt

  • 1/2 cup chopped roasted pecans or walnuts (optional)

Here’s How:

  1. Preheat oven to 350.

  2. Place parchment paper in 8/8” baking dish.

  3. With an electric mixer, cream the fat, then add sugar and one by one, add eggs. Cream on medium high until frothy.

  4. Add vanilla, sea salt and cacao until well blended.

  5. Slowly add melted chocolate.

  6. Add nuts if using.

  7. Pour on to parchment paper and bake for 20-25 minutes or until almost done.

  8. Let cool and enjoy!
