Aduki Bean Brownies

Adzuki beans are higher in protein than most other beans. They contain a high amount of B vitamins and are known to strengthen bones, aid in digestion, aid in weight loss, manage diabetes, repairs cells in the body and helps in detoxifying the body. Winter squashes are an excellent source of fiber, increases Vitamin A and C and help regulate and control blood sugar.

These brownies definitely have an “adzuki” bean flavor but they are moist, fudgy and a healthy treat you would feel good about offering to your kids!

Ingredients:

  • 6 pitted dates

  • 2 cups cooked adzuki beans

  • 1 cup cooked squash (kabocha, acorn or butternut)

  • 1 T real maple syrup (optional)

  • 2 eggs

  • 4 T ghee, coconut oil or a combination

  • 1 tsp cinnamon

  • 1/4 cup cocoa powder

  • 1/8 tsp sea salt

Here’s How:

  1. Preheat oven to 350.

  2. Place parchment paper in an 8/8” baking dish.

  3. Use a food processor, and start with dates and blend.

  4. Add ingredients a few at a time and blend until all ingredients are added.

  5. Use a rubber spatula, and place into baking dish, smoothing out and tapping down to remove any bubbles.

  6. Bake for 35-40 minutes or until done.

  7. Cool on a rack, cut into squares and enjoy.
