Almond Butter Brownies, no eggs or dairy, gluten free

Ingredients:

  • 1 cup almond butter

  • 2 T ground flax seeds mixed with 6 T filtered water

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1/3 cup coconut sugar

  • 1/4 cup almond flour

  • 1 tsp baking soda

  • 1/4 cup cocoa powder

  • 1/4 cup chopped roasted walnuts or pecans (optional)

  • several pinches of flake sea salt

Topping:

  • 1 1/2 T coconut oil

  • 4 oz dark chocolate (70%)

Here’s How:

  1. Preheat oven to 350 and place a greased parchment paper in an 8/8” baking dish.

  2. Make flax seed mixture and let sit for 10 minutes.

  3. Mix wet ingredients in a bowl.

  4. Mix dry ingredients in another bowl.

  5. Mix flax mixture into wet ingredients and then combine the wet and dry.

  6. Place mixture into baking dish pressing with a spatula or piece of parchment until even.

  7. Sprinkle with flake sea salt.

  8. Bake for 20 minutes or until done.

  9. Melt chocolate and coconut oil in a double boiler.

  10. After brownies are slightly cooled, drizzle chocolate on top.

  11. Refrigerate 20 minutes.

  12. Enjoy!
