Almond Butter Brownies, no eggs or dairy, gluten free
Ingredients:
1 cup almond butter
2 T ground flax seeds mixed with 6 T filtered water
1/3 cup maple syrup
1 tsp vanilla extract
1/3 cup coconut sugar
1/4 cup almond flour
1 tsp baking soda
1/4 cup cocoa powder
1/4 cup chopped roasted walnuts or pecans (optional)
several pinches of flake sea salt
Topping:
1 1/2 T coconut oil
4 oz dark chocolate (70%)
Here’s How:
Preheat oven to 350 and place a greased parchment paper in an 8/8” baking dish.
Make flax seed mixture and let sit for 10 minutes.
Mix wet ingredients in a bowl.
Mix dry ingredients in another bowl.
Mix flax mixture into wet ingredients and then combine the wet and dry.
Place mixture into baking dish pressing with a spatula or piece of parchment until even.
Sprinkle with flake sea salt.
Bake for 20 minutes or until done.
Melt chocolate and coconut oil in a double boiler.
After brownies are slightly cooled, drizzle chocolate on top.
Refrigerate 20 minutes.
