Almond Milk

This is surprisingly easy to make and if you buy a big bag of organic raw almonds (Costco). It is a great alternative to dairy and I believe the best choice for alternative milks if you are not sensitive to almonds. It’s very economical and tastes so much better than store bought. And so fresh tasting too!

Ingredients:

  • 1 cup raw almonds

  • 3 cups filtered water

  • pinch of sea salt

  • 1 medjol pitted date (optional)

  • 1 tsp real vanilla extract

Here’s How:

  1. Soak almonds covered with water for approximately 8 hours.

  2. Drain and place in a food processor with a pinch of salt, the date, vanilla and water. (May need to add a little water at a time so it doesn’t overflow. Process for about 2 minutes to be sure the almonds are well ground up.

  3. In a large bowl, place a strainer, and then take a thin dish towel and drape it over the strainer and pour nut mixture into it and let it drain into the bowl. Then bring the 4 corners of the cloth together, twist and squeeze the excess liquid into the bowl.

  4. Store in a jar and use to make matcha latte, hot cocoa, or use however you desire.

  5. Save the pulp to add to muffins, breads, dog biscuits, and more!
