Apple Walnut Cake
This cake is gluten, dairy and sugar free, and wonderfully moist and tasty. A great addition to a holiday wintery feast or even as a breakfast treat!
Ingredients:
1 1/2 cups almond flour
1/3 cup tapioca flour
2 tsp baking powder
2-3 tsp cinnamon
1 tsp powdered ginger
1/8 tsp freshly grated nutmeg or powder
1/4 tsp sea salt
2 T maple syrup
1/4 cup avocado or coconut or olive oil
2 eggs (room temperature)
1 T vanilla extract
1/3 cup granulated monk fruit
1 medium apple, diced
1/2 cup walnuts, chopped
Here’s How:
Preheat oven to 350.
Mix dry ingredients in a bowl.
Mix wet ingredients, including granulated sweetener. Wait on apples and walnuts.
Combine wet and dry, add apples and walnuts and place in a greased 8” round cake pan or a bundt pan.
Bake for about 20 minutes or until done.
Cool and enjoy!
