Apple Walnut Cake

This cake is gluten, dairy and sugar free, and wonderfully moist and tasty. A great addition to a holiday wintery feast or even as a breakfast treat!

Ingredients:

  • 1 1/2 cups almond flour

  • 1/3 cup tapioca flour

  • 2 tsp baking powder

  • 2-3 tsp cinnamon

  • 1 tsp powdered ginger

  • 1/8 tsp freshly grated nutmeg or powder

  • 1/4 tsp sea salt

  • 2 T maple syrup

  • 1/4 cup avocado or coconut or olive oil

  • 2 eggs (room temperature)

  • 1 T vanilla extract

  • 1/3 cup granulated monk fruit

  • 1 medium apple, diced

  • 1/2 cup walnuts, chopped

Here’s How:

  1. Preheat oven to 350.

  2. Mix dry ingredients in a bowl.

  3. Mix wet ingredients, including granulated sweetener. Wait on apples and walnuts.

  4. Combine wet and dry, add apples and walnuts and place in a greased 8” round cake pan or a bundt pan.

  5. Bake for about 20 minutes or until done.

  6. Cool and enjoy!
