Beautiful Baked Beets

Beets are a wonderful treat in the winter time. As the weather cools, root veggies are a great addition to our diet. They're warming, and they help us feel more rooted as we go through the transition into the colder weather. Beets are loaded with Vitamins A, B1, B6, and C.  The greens contain iron, calcium,  magnesium, copper, phosphorous and sodium. Plus beets are loaded with fiber, so they are an excellent aid for constipation. Both beet roots and greens are great for cleaning and building blood. Try this satisfying dish...

Ingredients:

  • beets, 4 large or 6-7 small

  • capers, 2 T

  • 1/3 cup crumbled feta cheese (optional)

  • 2 T roasted chopped walnuts (optional)

  • 3 T Delicious Vinaigrette Salad Dressing

Here's how:

Wrap beets individually in tinfoil without washing or peeling. Bake on a cookie sheet at 350 degrees for 1 hour.  Cool. Wear rubber gloves and pop skins off. Cut into bite-sized chunks. Sprinkle with capers, and top it off with Delicious Vinaigrette Salad Dressing. Serve warm or chilled.

Tip: Eat as a side dish or serve on top of salad greens or steamed beet greens.
