Butterscotch Brownies

For those that either do not like chocolate, or choose not to eat it, try this very satisfying treat.

Ingredients:

  • 4-5 T unsalted butter or ghee

  • 1 1/2 cups sucanat*

  • 2 eggs

  • 2 1/2 tsp vanilla extract

  • 1 cup flour ( whole wheat pastry, unbleached white, or rice flour)

  • 2 tsp baking powder

  • 1/2 tsp sea salt

  • 1/2 cup roasted chopped pecans, walnuts or almonds

Here’s How:

  1. Preheat oven to 350 degrees.

  2. Melt  the butter over low heat. Remove pot from burner.

  3. Stir in sucanat.

  4. Add beaten eggs.

  5. Combine all dry ingredients in mixing bowl, then add wet ingredients.

  6. Place in oiled 8x8 inch baking dish and bake for 20-30 minutes.

Tip: Cool brownies slightly (10 minutes), cut into pieces,  and leave in pan to cool completely before removing - otherwise they get hard to cut. I prefer 1 inch squares  - it's a satisfying treat without being too  much.

* Sucanat can be found at New Seasons, Whole Foods, or Fred Meyer Nutrition department. It is a raw cane sugar that contains protein, potassium, Vitamins A, C, calcium, iron, niacin and phosphorous. It is a good alternative to brown sugar. And it really makes these brownies yummy!
