Carrot Burdock Root Saute
Ingredients:
2 cups carrots cut into match sticks approximately 3” long
2 cups peeled burdock root cut just like the carrots
1 T ghee or avocado oil
1 cup water
1-2 T tamari or soy sauce
2 tsp toasted sesame oil
2 T chopped green onions
2 tsp roasted sesame seeds
Here’s How:
Cut up all vegetables and set aside in piles.
Heat skillet, add fat and quick saute carrot for 3 minutes and remove.
Add burdock root to hot pan and saute 5 minutes. Cover with water and simmer with lid for 1o minutes. Add carrots for an additional 5 minutes.
Season with soy sauce, sesame seeds and green onions and cook for 2 more minutes.
Sprinkle with sesame seeds and serve.
