Carrot Burdock Root Saute

Ingredients:

  • 2 cups carrots cut into match sticks approximately 3” long

  • 2 cups peeled burdock root cut just like the carrots

  • 1 T ghee or avocado oil

  • 1 cup water

  • 1-2 T tamari or soy sauce

  • 2 tsp toasted sesame oil

  • 2 T chopped green onions

  • 2 tsp roasted sesame seeds

Here’s How:

  1. Cut up all vegetables and set aside in piles.

  2. Heat skillet, add fat and quick saute carrot for 3 minutes and remove.

  3. Add burdock root to hot pan and saute 5 minutes. Cover with water and simmer with lid for 1o minutes. Add carrots for an additional 5 minutes.

  4. Season with soy sauce, sesame seeds and green onions and cook for 2 more minutes.

  5. Sprinkle with sesame seeds and serve.
