Cranberry Sauce with Pomegranates

This recipe is loaded with anti-oxidants. (Anti-oxidants protect cells from damage and reduce inflammation and the effects of aging) Cranberries may help urinary tract infections, support heart health, protect against gastric ulcers and stomach cancer. Pomegranates are also very high in anti-oxidants and studies show that they protect your heart health, lowering blood pressure and reducing blood sugar levels. Cinnamon also has anti-oxidant properties. It is anti-inflammatory, anti-bacterial and anti-fungal, lowers blood sugar, improves insulin sensitivity and may be beneficial for the aging brain. The recipe uses a low carb sweetener which does not raise blood sugar levels or insulin levels.

Ingredients:

  • 6 cups fresh cranberries

  • 1 -1 1/4 cups sweetener (a mixture of 1/2 cup xylitol, 1/4 cup monk fruit and 1/2 cup coconut sugar)

  • 4 wide strips of orange zest

  • 1/4 tsp sea salt

  • 1/2 tsp cinnamon

  • 3/4 cup juice (orange or pomegranate)

  • 3/4 cup fresh pomegranate

Here’s How:

  1. Wash and place cranberries in a small heavy pot.

  2. Add rest of ingredients and bring to simmer.

  3. Cook for 10 minutes and smash some of the cranberries.

  4. Let cool and add in pomegranate, stir and chill.
