Crunchy Oatmeal with Fruit Compote

Steel cut oats are the inner kernels of whole oat that have been cut down to pin-head sized pieces. The fiber in them helps to lower cholesterol and move food efficiently through the digestive tract. They are rich in iron and B vitamins and may enhance immune function.

Ingredients:

  • 1/3 cup steel cut oats

  • 1 1/2 cup filtered water

  • 1/8 tsp sea salt

  • 1 tsp cinnamon

  • 1/4 cup sunflower seeds

  • 1/3 cup pumpkin seeds

  • 1/8 cup chia seeds

  • 2 T poppy seeds

  • 1 cup unsweetened almond milk (or whatever you choose)

  • 1 1/2 cup frozen berries (can add a bit of mango, with any berries)

Here’s How:

  1. In a saucepan on medium heat, add water, oats, salt, and cinnamon. Cook until water evaporates.

  2. In a separate saucepan, cook fruit on low heat until it thickens. (Can use immersion blender to break up mango if desired)

  3. Bake sunflower and pumpkin seeds on a cookie sheet at 350 for 5 minutes.

  4. Measure out other seeds and set aside.

  5. Add milk and seeds to porridge and top with fruit compote.
