Flourless Chewy Chocolate Chip Cookies
Ingredients:
1 cup crunchy or creamy almond butter
1/2 cup coconut sugar (or sucanat sugar)
1 T vanilla extract
1 egg
1 tsp baking soda
1/2 cup chopped dark chocolate chips, 70% or higher, or a 1/2 bar of 3.5 chocolate bar can be used.
Preheat oven to 350.
Combine first 5 ingredients and mix until well blended.
Chop chocolate to size of chips.
Add remaining ingredients and form into small balls.
Place on a greased cookie sheet, 1" apart.
Bake approximately 10 minutes, until they look a bit under done.
Allow to cool on sheet before moving.
Chill in fridge.
These cookies are almost better several days later.
*Sucanat is a healthy sweetener option as well. If you want very low carb (no sugar grams) you can use 1/2 cup swerve or 1/3/cup monk fruit.
