Indian Spiced Roasted Cauliflower
Cauliflower is low in calories, contains almost all vitamins and minerals and is high in fiber which feeds healthy bacteria, reduces inflammation and helpful for digestive health. It is very versatile and receptive to a variety of spices and cooking methods. Below is a roasted dish with Indian spices which I am particularly fond of as the weather cools as it is warming to the body.
Ingredients:
1 head of cauliflower
drizzle of olive oil (1-2 T)
sea salt and pepper to taste
1/2 tsp garlic granules
1-2 tsp curry powder of your choice (I use Vata Churna, which you can order from Maharishi Ayurveda, and it's delicious)
1/8 cup finely chopped parsley (optional)
Here's How:
Preheat oven to 425.
Cut cauliflower into florets and place in a large bowl.
Drizzle olive oil and sprinkle with spices and mix well.
Place on a cookie sheet and bake for 15-30 minutes until slightly browned.
