Kale Chips, non dairy very cheesy

These kale chips are my new favorites as they are crunchy, tangy and cheesy. Very satisfying.

Ingredients:

  • 1 1/2-2 bunches of kale (curly, lacinato or combo)

  • 1/2 cup cashews

  • 2 tsp light miso

  • juice of 1 lemon

  • 5 T nutritional yeast

  • 2 T extra virgin olive oil

  • Sea salt to taste

Here’s How:

  1. Preheat oven to 275.

  2. Remove kale from stems and place on cookie sheet in large pieces, approximately 4/4”.

  3. Use food processor and blend all ingredients except kale.

  4. Using your hands, massage mixture onto kale and spread out on cookie sheet.

  5. Bake first round for about 10-15 minutes. Check kale and move soggiest pieces to edge of sheet.

  6. After about 7 minutes, check chips and when krispy, remove, place in a serving bowl, return unfinished kale to the oven and keep doing this process until done.
