Mango Salsa

It’s so much fun to top protein or grain with interesting salsas.

Mangoes are high in nutrients, particularly Vitamin C and minerals. It aids in immunity, iron absorption and cell growth and repair, hence supports healthy fetal growth and development.

Ingredients:

  • 2 cups fresh or frozen mango, cut into small chunks

  • 1 avocado cut into small chunks

  • Juice of 1 lime (lemon can be used if no lime available)

  • 1/3 cup chopped red pepper

  • 1/3 cup chopped red onion

  • 1 jalapeno seeded and minced or 2 tsp spicy sauce (can use Hot Mama Salsa, Aardvark hot sauce or sriracha or harissa) to taste

  • 1-2 T chopped parsley (or cilantro)

  • 1/4 tsp sea salt

  • fresh ground pepper to taste

Here’s How:

  1. Chop mango and avocado, and cover with lime juice.

  2. Add remaining ingredients. Taste, adjust seasonings and chill

  3. Serve with grilled salmon, chicken or sausage.
