Miracle Noodle Salad
When eating shirataki noodles, they aren't completely digested. They just pass through the length of the digestive tract. As they move, they stimulate the muscles in your intestines. They clean the digestive tract and promote soft-stool consistency as they pass through. While on their journey, the noodles create healthy, short-chained fatty acids in the body. These can help in lowering the levels of bad cholesterol and boosting the immune system. They can also clean the colon, which aids in mineral absorption.
Meal for 2:
Ingredients:
1 package miracle noodles (0 calories and carbohydrates, made from the Japanese konjac plant-shirataki noodles)
1 cup broccoli florets
1/4 cup chopped shallot
2 garlic cloves, sliced or chopped
shavings of carrots with a peeler, 1 carrot
bed of mixed lettuces, spinach or kale, about 2/3 cup
Sauce:
1/2 cup nut butter, almond butter or peanut butter
1 T fish sauce (optional)
2 T wheat free tamari or soy sauce
1 T finely chopped or grated fresh ginger root
3 T salsa or spicy red sauce of your choice
Blend well and set aside.
Here’s How:
Place noodles in a colander and rinse under cold water thoroughly.
Make sauce and set aside.
Saute shallot, then garlic and broccoli till done. Sprinkle with sea salt.
Place noodles and veggies in a mixing bowl, season with salt and pepper and drizzle a little nut butter sauce on top and toss.
Serve pasta on top of a bed of lettuce, and drizzle more sauce on top. Sprinkle with ground sesame seeds or roasted nuts or seeds of your choice.
