Pistachio Pesto

Ingredients:

  • 1/2 cup shelled pistachios

  • 1 cup fresh basil leaves

  • 1 T lemon juice

  • 1-2 T nutritional yeast (optional)

  • 1/2 cup olive oil

  • 1/4 tsp sea salt

  • fresh ground pepper to taste

  • 1-1/2 T water

1. Place all ingredients in food processor and pulse until blended. Add a touch more lemon juice and sea salt if needed.2. Refrigerate in airtight container.3. Serve with cut up vegetables or other dipping munchables.
