Raw Cranberry Relish

In my growing up years, I only tasted cooked cranberries. It wasn't until I became a young adult and spent many Thanksgivings with my brother and his family that his wife, Cascade turned me on to a raw cranberry dish that is refreshing and delicious.

Ingredients:

  • 1 bag fresh cranberries (12oz)

  • 1 small organic navel orange

  • 1 crisp apple

  • 1/2 bag  frozen rasberries (6oz)

  • 1/4 c Xylitol*

  • 1/2 c organic sugar

  • 1/8 c Grand Marnier (optional)

  1. Place cranberries in food processor  (blender will not work) and pulse till cranberries are ground up coarsely.

  2. Cut ends off orange, quarter and add to cranberries with peel intact.

  3. Add cored apple and berries and pulse again until everything is chopped.

  4. Add sweeteners and liquor if desired, and give a final pulse. Do not overprocess as relish will turn to mush!Taste it to see if you prefer more sweetener or any other ingredient.

    This recipe allows for your creative touch. Do not worry about exact amounts. Trust your taste buds and have fun! Chill in fridge and serve with plain yogurt as a snack or for Thanksgiving dinner.

    *Xylitol is an alternative sweetener that has 40% fewer calories than sugar and 75% less carbs. 1 tsp of sugar=15 calories, 1 tsp of Xylitol=10 calories. Xylitol  has a lower impact on our blood sugar as compared to regular sugar.
