Simple Stuffed Chicken Breast

Ingredients:

  • 2 large boneless chicken breasts
  • 3 cups raw spinach
  • 2 garlic cloves, chopped
  • 1/2 cup ricotta or blended cottage cheese
  • salt and pepper to taste

Here's How:

  1. Preheat oven to 350.
  2.  Place chicken breasts in skillet with 2" of water, cover and steam for 8-10 min until almost done. (slightly pink)
  3. Slice chicken breast without slicing through completely  with each slice being about 1/2" thick.
  4. In a separate skillet, steam the spinach, and when wilted, drain and chop.
  5. Mix spinach with ricotta.
  6. Season with salt and pepper and stuff spinach mixture into chicken breast slices.
  7. Bake at 350 for 5-10 minutes and serve.

Yield: 4 servingsThis dish goes well with a simple green salad.
