Simple Stuffed Chicken Breast
Ingredients:
- 2 large boneless chicken breasts
- 3 cups raw spinach
- 2 garlic cloves, chopped
- 1/2 cup ricotta or blended cottage cheese
- salt and pepper to taste
Here's How:
- Preheat oven to 350.
- Place chicken breasts in skillet with 2" of water, cover and steam for 8-10 min until almost done. (slightly pink)
- Slice chicken breast without slicing through completely with each slice being about 1/2" thick.
- In a separate skillet, steam the spinach, and when wilted, drain and chop.
- Mix spinach with ricotta.
- Season with salt and pepper and stuff spinach mixture into chicken breast slices.
- Bake at 350 for 5-10 minutes and serve.
Yield: 4 servingsThis dish goes well with a simple green salad.
