Oat Chocolate Chip Cookies

Ingredients:

  • 2 1/4 cups old fashioned rolled oats

  • 1 T arrowroot powder

  • 1/2 tsp baking powder

  • 1/2 tsp ground cinnamon

  • 1/2 cup coconut oil or ghee or unsalted butter

  • 1/3 cup organic sugar (xylitol, or monk fruit for lower carbs)

  • 1/3 cup brown sugar (coconut sugar or sucanat or monk fruit again if lower carb)

  • 1 large egg

  • 1 tsp real vanilla extract

  • 1 cup chopped dark chocolate or dark chocolate chips

  • 1/2 tsp flake sea salt

  • 1 piece of parchment paper

Here’s How:

  1. Preheat oven to 375.

  2. Place 2 cups of the rolled oats in a food processor and pulse till ground fine, then add the powders and cinnamon and pulse briefly.

  3. Use a hand held mixer and blend fat and sugar until fluffy.

  4. Add egg and vanilla and mix until well blended.

  5. Add flour mixture and mix just until well blended.

  6. Chop chocolate and mix in.

  7. Drop by spoonfuls on parchment that is placed on a cookie sheet and sprinkle with flakes of sea salt.

  8. Bake for 15-20 minutes or until slightly browned.

  9. Let cool on a rack before enjoying!
