Cucumber Salad

Summer is a great time of year for this refreshing simple salad! They are over 90% water, low in calories, good for the digestion and promote weight loss too.

Ingredients:

  • 2 large cucumbers

  • 3-4 green onions, chopped fine

  • 1-2 T chopped parsley

  • 2 T rice vinegar (apple cider can be used or even lemon juice)

  • 1 1/2 T liquid aminos or wheat free tamari

  • 1 1/2 T monk fruit granules

  • 1 T toasted sesame oil

Here’s How:

  1. Peel cuc’s, slice open and if not too seedy, just slice into 1/8” slices

  2. Chop green onions and parsley and place on cuc’s.

  3. Mix dressing and pour on to veggies and chill.
