Green Beans with Lemon and Garlic

Ingredients:

  • 2 lb green beans, trimmed

  • 1 shallot, diced

  • 3 garlic cloves, thinly sliced

  • rind of 1 lemon

  • a pinch or 2 of red pepper flakes

  • salt and pepper to taste

  • 2 T ghee or fat of your choice that tolerates high heat (avocado oil)

Here’s How:

  1. Trim beans and blanch in boiling water for no more than 2 minutes, and then drain and immerse in cold water bath until cool. Set aside.

  2. Heat large saute pan and add fat and saute shallots for 3 minutes, then add garlic for another minute.

  3. Toss green beans into pan and toss on high heat until heated.

  4. Add lemon rind, salt and peppers and enjoy!
