Turkey Larb
Ingredients:
1 1/2 -2 lb ground turkey (chicken works too)
1-2 T ghee or avocado oil for sauteeing
2 shallots, chopped
1/2 small red onion, chopped
4 “ piece of lemon grass (optional) finely chopped in a food processor
1/2 cup fresh basil
1/4 cup fresh mint
1 chili pepper, diced, or 1/2 tsp sriracha sauce or a sprinkling of red pepper flakes to taste
juice of 1 lemon
juice of 2-3 limes
1/2-1 tsp sriracha sauce
salt and pepper to taste
1 head of butter leaf , romaine or red leaf lettuce, washed, and left whole on a platter to use as a wrap
1/4 cup chopped cilantro or parsley for garnish.
Here’s How:
Using a large saute pan, heat fat and begin sauteeing shallots, red onion and lemon grass (if using) until slightly browned.
Add ground turkey and brown, stirring and breaking it up into little pieces.
Add remaining ingredients except lettuce and stir until done.
Allow to cool and serve by spooning larb into the center of a piece of lettuce to make little larb wraps.
Enjoy with dips and vegetables on the side.
