Aioli Sauce

Aioli is an emulsion of garlic and oil, coming from Spain, Italy and France. It is easy and quick to make. It is a delicious and simple dipping sauce. And, a nice accompaniment to crab cakes.

Ingredients:

  • 1 egg, room temperature

  • 1 egg yolk, room temperature

  • 2-3 garlic cloves, peeled

  • 1/2 tsp coarse sea salt

  • 1 T dijon mustard

  • 2 tsp fresh lemon juice

  • 1 cup extra virgin olive oil

Here’s How:

  1. Place eggs and remaining ingredients in a tall glass jar and blend with an immersion blender or place ingredients in a blender and do the same.

  2. Chill and serve as a dipping sauce for crab cakes and more.
