Apple Pecan Muffins, flourless

  • 4 organic eggs

  • 1/4 cup honey, maple syrup, coconut sugar or date sugar (monk fruit can be used for low carb)

  • 2 T ghee or coconut oil, melted

  • 2 tsp real vanilla extract

  • 1 1/2 cups almond flour

  • 1 T ground cinnamon

  • 1/2 tsp ground ginger

  • 1/2 tsp allspice

  • 1 tsp baking soda

  • 1 small apple, diced

  • 1/3 cup chopped roasted pecans, walnuts or almonds

Here’s How:

  1. Preheat oven to 350.

  2. Grease a muffin tin or place liners in it and set aside.

  3. Whisk together the wet ingredients through the fat.

  4. Add the dry ingredients to the wet and spoon into the muffin tin.

  5. Bake for 20 minutes or until done.

  6. Cool on a cooling rack.
