Peanut Butter Oatmeal Cookies

These cookies are nice for breakfast with a bowl of greek yoghurt. They have no animal products and are simple to make.

Ingredients:

  • 1/4 cup peanut butter or almond butter

  • 1/4 cup apple sauce

  • 1/4 cup real maple syrup

  • 5 T unsweetened almond milk

  • 1 tsp real vanilla extract

  • 1 tsp cinnamon

  • 1/8 tsp sea salt

  • 1 cup oats (regular oats can be pulsed in a food processor to break up if you prefer less chewiness)

  • 3/4 cup oat bran

  • 1 tsp baking powder

Here’s How:

  1. Preheat oven to 325.

  2. Line a baking sheet with. parchment paper.

  3. Mix wet ingredients through the vanilla and stir till fluffy.

  4. Mix dry ingredients in a separate bowl, blend and then fold into wet ingredients.

  5. Chill in fridge for 15 minutes or freezer for 5.

  6. Drop by spoonfuls on parchment papered cookie sheet and bake for about 10 minutes.

  7. Cool on a rack and store in an airtight container in the fridge.
