Avocado Corn Salad
Ingredients:
1 fresh ear of corn, cut off the cob
2 large avocados, cut into chunks
juice of a lime
2 T finely chopped red onion
1/2 of a red pepper, coarsely chopped
2 T chopped parsley or cilantro
1-2 cloves of garlic, pressed (optional)
salt and pepper to taste
Here’s How:
Remove corn from cob and place in a large bowl.
Add remaining ingredients and mix gently so the avocado doesn’t lose it’s cube form.
Chill and serve.
This goes well with a green salad and grilled grass fed beef burgers.
