Banana Bread, flourless

Ingredients:

  • 2 ripe bananas

  • 2 eggs

  • 1 T honey

  • 3 drops of liquid stevia (optional)

  • 1/4 cup greek yoghurt

  • 2 tsp vanilla extract

  • 2 1/2 cups almond flour (feel free to combine almond meal and flour)

  • 1 tsp baking powder

  • 2 tsp ground cinnamon

  • 1/8 tsp freshly grated nutmeg or dry

  • 1/2 tsp sea salt

  • 1/4 cup chopped nuts of your choice and/or dark chocolate chips

    Here’s How:

    1. Mix all wet ingredients together, using an immersion blender or mashing bananas first and then adding the rest of wet ingredients to mix.

    2. Mix dry ingredients in a separate bowl, except the nuts.

    3. Pour the wet into the dry, mix and add the nuts.

    4. Grease a 9/5” loaf pan with avocado oil or ghee before putting batter in pan.

    5. Bake at 350 for 30-40 minutes or until done.

    Consider baking on outdoor grill if the weather is too hot to turn on the oven. If so, use a cast iron skillet and keep the grill lid down at approximately 350 for 20-25 minutes.
