Ingredients:

  • 2-3 large zucchini

  • 3 garlic cloves

  • juice of 1-2 lemons (1/2 cup)

  • 3/4 cup tahini

  • salt and pepper to taste

Here’s How:

  1. Roast whole zucchini on a greased cookie sheet in the oven on 425 for an hour or until very soft.

  2. Place zucchini in a colander and drain well by pressing.

  3. Use a food processor, chop garlic.

  4. Add zucchini and blend.

  5. Add remaining ingredients and blend and season to your taste.

  6. Chill and serve with cut up veggies and crackers.
