Blueberry Grain Free Crumble

Oats can cause gas and bloating for some so here’s a recipe without using them that is tasty and nutritious.

Ingredients:

  • 3 cups blueberries fresh or frozen

  • juice of 1/2 lemon (1 T)

  • 1 tsp fresh grated lemon zest (zest of about 1 medium lemon)

  • 1 1/2 T honey

  • 1/2 tsp vanilla extract

  • 1 T arrowroot powder

For the crumble:

  • 2 cups almond flour

  • 1/4 cup coconut flour

  • 1/3 cup sucanat, coconut or date sugar

  • 1 tsp cinnamon

  • 1/2 tsp sea salt

  • 1/2 cup softened ghee or coconut oil or grass fed butter melted

  • 1 tsp vanilla extract

  • 1/2 cup chopped pecans

Here’s How:

  1. Preheat oven to 350.

  2. Place blueberries through arrowroot in a saucepan, stir and heat till almost boiling and then simmer for 5 minutes. Set aside to cool.

  3. Place a piece of parchment in an 8/8” pan and set aside.

  4. In a medium sized bowl, stir the dry ingredients of the crumble, add the fat and vanilla and mix till combined.

  5. Press 1/2 the mixture evenly into the parchment paper and bake for 10-15 minutes until golden..

  6. Pour the blueberry mixture on top of crust, then the rest of the crumble on top. Add the chopped pecans and gently press into the crumble.

  7. Bake for another 20-25 minutes or until golden brown.

  8. Let cool and enjoy!

Enjoy for breakfast with a little plain or vanilla greek yoghurt.
