Oat Free Granola
Granola without oats is lower in carbohydrates and doesn’t have the impact of grains on the body. Even though oats do not have gluten, often they are manufactured in facilities where grains have been processed using the same equipment.
Ingredients:
1/2 cup pecans
1/3 cup walnuts
1/2 cup almonds
1/3 cup pumpkin seeds
1/2 cup coconut flakes
1 1/2-2 T maple syrup
1 -1 1/2 T coconut oil, melted
pinch of sea salt
2-3 tsp cinnamon
Here’s How:
Preheat oven to 325.
Coarsely chop the nuts and place in a bowl.
Slightly chop the seeds and add to nuts.
Melt the oil or if soft, simply add to the nuts with the remaining ingredients and mix well.
Place mixture on a piece of parchment paper on a cookie sheet and bake 15-18 minutes.
Let cool and enjoy with yoghurt and fruit or buy itself as a little snack.
Store in the fridge for approximately 2 weeks.
