Cauliflower Bagels
Cauliflower bagels are a low carb, nutritious fun treat that are high in protein and great to serve to guests for brunch.
Ingredients:
4 cups cauliflower finely chopped and slightly cooked.
1/4 cup fine almond flour
1/4 cup coconut flour
2 tsp baking powder
4 eggs
1 cup shredded mozzarella or pecorino romano (sheets cheese) Cheese is optional if you are avoiding dairy
everything bagel seasoning
Here’s How:
Preheat oven to 400.
Place all ingredients except 1 egg in a bowl and mix until evenly combined.
Press into a 1/2 cup measuring cup.
Turn over onto parchment and shape into bagel, making a hole with your thumb and smoothing the outer surface.
Whisk remaining egg and brush on bagel. Sprinkle with seasoning.
Shape into bagels by forming balls (recipe should make about 6 bagels)
Press slightly and create bagel hole.
Sprinkle with seeds of your choice: poppy, sesame, crushed almonds, fennel, coarse salt.
Bake for about k20 minutes into golden brown.
These bagels can be cut and smeared with spread of your choice; nut butter, ghee, cream cheese, etc
They make a nice brunch accompaniment to a frittata and salad!
