Cauliflower Crusted Pizza

Ingredients:

  • 1 bag (12 oz) of frozen cauliflower rice

  • 3 eggs

  • 2/3 cup almond flour

  • 1 tsp oregano

  • 1 T dijon mustard

  • 1/2 tsp salt

  • 3/4 cups grated parmesan cheese

  • 1 cup broccoli florets

  • 2 pieces crisped turkey bacon

  • Various additional toppings could be fresh mozzarella, olives, sliced mushrooms, fresh tomatoes, diced or sliced red peppers, capers, artichokes, hearts of palm,or whatever suits you, including baking an egg on top!

Here's How:

  1. Preheat oven to 350.

  2. Mix the defrosted cauliflower rice, egg, almond flour and spices in a bowl.

  3. Oil a pizza pan and press cauliflower mixture on to the pan and spread evenly with a spatula.

  4. Bake for 30 minutes at 350.

  5. Remove from oven, raise oven temperature to 425 and cool dough. Sprinkle toppings on dough saving the cheese for last.

  6. Bake another 10 minutes at 425 or until done.
