Chia Hemp Pudding

This is a high fiber, high protein comforting dessert especially in the cooler weather.

Ingredients:

  • 2 cups almond milk unsweetened

  • 4 T chia seeds

  • 4 T hemp hearts or ground hemp seeds

  • 2 tsp maca powder

  • 1 tsp carob powder

  • a pinch of sea salt

  • 2 tsp ground cinnamon

  • 1 T real maple syrup (or 1 T monk fruit, or allulose or 7-9 drops liquid stevia)

  • 1/2 tsp vanilla bean or 1 1/2 tsp real vanilla extract

Here’s How:

  1. Bring milk to slow boil and immediately turn down to simmer.

  2. Add chia and hemp and stir.

  3. Add remaining ingredients except maple syrup and vanilla.

  4. Simmer for 5-7 minutes.

  5. Turn off heat, add remaining ingredients and let sit for 5 minutes.

  6. Enjoy warm or chill and eat cold.

  7. Top with toasted coconut and slivered almonds or a variety of nuts, greek yoghurt, jam and more.
